Description
Now it is ready: the GRAND RESERVE Zero Dosage (brut nature) was disgorged in March 2025 (03/2025) after 10 years of yeast storage (vintage 2014) and exemplifies exactly what great, long-aged bottled wines stand for. Purist, uncompromisingly dry, yet enormously complex and intense.
Aromatically, it is clearly influenced by the yeast: brioche is in the foreground, accompanied by almonds and a precise citrus world with lemongrass, grapefruit, and lime. Green apple and mirabelle plum add fruitiness. On the palate, it is polished and expressive, initially very precise and straightforward, then the yeasty density builds up: spicy and complex, with noticeable depth. The finish remains creamy, but completely without sweetness. Brut nature, in other words, just maturity, structure, and tension.
Taste & Style:
- Zero Dosage / brut nature: pure, dry, without dosage
- 10 years of yeast aging for depth and complexity
- Aromas of brioche, almonds, grapefruit, lime, lemongrass
- accompanied by green apple, mirabelle plum, very precise and long
Goes particularly well with:
Oysters, caviar, seafood, sushi, fine cuisine, mature cheese, or on its own if you really want something special in your glass.
